This one’s a Diwali special from Romy’s wonderful new book Romy Gillโs India, and like a lot of the recipes to feature, it’s a sentimental one. Both her mum and grandma cooked bread pakora (amongst a whooole lotta delicious fried foods) over the holidays, and today Romy continues that legacy by sharing their recipes with friends and loved ones. The secret is slabs of cheap white bread, perfectly spiced potato and a combo of bicarb and fizzy water to make the batter extra light. Dunk it in a quick chutney and you’re onto a winner.
