CHEFS MAKING SNACKS featuring Chishuru’s akara burger ✨ Big news, guys. This series may well have peaked because we only managed to get to make us a snack!?! Joké is the first Black woman in the UK to win a Michelin star. She’s a certified star of the industry, but what is she snacking on between service? When we dropped by her West African restaurant Chishuru she made akara – a Nigerian black-eyed-bean fritter which she has special memories of eating as a kid. It’s also dish that is rich in Black history, having travelled to the Caribbean and Brazil with enslaved people. Today, there are versions of it around the world. Joké kept this akara traditional, except for the fact it was thrown it in a burger bun with grilled veg and shitto, which is a hot black pepper sauce. The result? A very very nice mid-service snack. We couldn’t think of a better guest to round off Black History Month. Do visit Chishuru if you get the chance!
